This is just a quick recipe I strapped together to test out the Safale K-97 yeast, that my LHBS had started carrying recently. I used hops leftover from previous batches.

I turned out pretty good. Like most belgians, this is a yeast-forward beer. The K-97 yeast gave it a small bit of tartness, and left a medium body that is complemented nicely by the hops. I carbonated the batch to a relatively high CO2 volume, as per the style. It had nice head retention, with considerable lacing on the glass.

* The mash water were treated with 2g, sparge water with 0.7g.

** Hop additions adjusted 20 minutes down to account for greater utilization due to using the no-chill method.
